Born in Hong Kong, Simon moved to Ireland at the age of 8 after spending time in Guatemala, Singapore, and Boston. His international upbringing and early exposure to diverse cultures sparked a deep interest in tourism and hospitality.

Simon holds a Bachelor’s degree in International Hospitality Management and Tourism from TU Dublin. He has built a strong foundation in the industry through hands-on experience in Ireland, the United States—namely New York and Nantucket—and the Maldives.

After graduating, Simon joined the Fáilte Ireland Graduate Programme, where he spent 9 months working with the Ireland’s Ancient East team. In June 2025, he transitioned to the Association Conference team, where he now focuses on attracting and supporting international conferences in Ireland.
